Does anyone know why running a Bokeh Server is significantly slower than implementing the same functionality with CustomJS callbacks? I’m not very familiar with how everything works underneath the hood

I've actually found the opposite to be the case in some cases I have seen. It is entirely dependent on the details of your use-case and situation, and impossible to speculate without knowing more about what you are doing.
