You can use either bokeh.models.widgets.Select or bokeh.models.widgets.MultiSelect (this is what crossfilter uses). I can point you to [1] example which uses Select widget and is easier to follow than crossfilter. Unfortunately there are no other examples showing MultiSelect in action.
